Had to make changes…combine 1/4 cup flour, 3 tbls. sugar, and 1 pinch salt; set aside. whisk together 1 egg white, 1/2 tsp. vanilla, and 1/2 tsp. almond extract. whisk in 2 tbls. melted butter. sift dry mixture into egg mixture and stir to mix. continue as per original recipe but keep in mind: your first 2-4 are going to look aweful.. What a success. this cake is very moist, rich and has the best chocolate taste. after making the cake 2-3 times, i made a few minor changes. i cream the butter and sugar for 5 minutes (with stand mixer; longer with hand held mixer) and mix 30 seconds after adding each egg. i can adjust the amount of coffee depending on the client, but 2 tsp is. I dissolve it in half a cup (3 or 4 fluid ounces) of water. i think your problem is that you are drinking way too much water as 24 fluid ounces is ridiculous. too much water leaches minerals from your body which us making you sick. note that drinking too much water is actually poisonous and people have died from doing this (google it)..
I give it 2 stars because it’s a pretty decent base recipe. however, unless one likes the taste of oats and bitter chalk, 1 tsp of cinnamon is far too much for less than 1 cup of finished product. so much that i threw away my first attempt at anything with chia seeds. i would start out with no more than 1/4 tsp cinnamon. maybe even 1/8.. I doubled the recipe and left out the ginger and cinnamon. i added 1 tsp of corn starch per recipe (so 2 tsps in this case). i would ad 3 – 4 tsps or a tbsp and then more if needed. i cut a steak into thin slices and marinated it, then served the beef with teriyaki over steamed rice and broccoli. my teenagers liked it too. will definitely make.
